Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Chocolate, Linseed & Coconut Slice
CHOCOLATE, LINSEED & COCONUT SLICE { GREAT ALTERNATIVE TO JAZZ UP THE KIDS LUNCH BOXES. } Contributor: Jen Shaw { INGREDIENTS } SLICE BASE 200g of melted butter (olive or coconut oil if dairy free) 1 egg 1 teaspoon of vanilla extract 1/4 cup of coconut flour 3/4 cup of coconut sugar 1/4 cup of cocoa 1/4 cup of linseed 1/2 cup of shredded coconut ICING 1/4 cup of coconut oil 2 tablespoons of cocoa 2 tablespoons of honey 1 teaspoon of vanilla extract { METHOD } In a bowl mix together egg, vanilla, sugar and cool melted butter until combined. Add coconut flour, cocoa, linseed and shredded coconut. Mix through. Pour mix evenly into a lined slice tray and bake at 180 degrees for 15 minutes or until firm. Remove and make icing while slice cools. Place a bowl over a boiling pot of water and melt coconut with other icing ingredients. Pour over slice base while still warm and sprinkle with some shredded or desiccated coconut. Place in the fridge until icing sets and then cut into small squares. Mexican Beef Bowl
MEXICAN BEEF BOWL { IT’S TIME FOR A FIESTA! BRING ON THE MEXICAN EVERYDAY OF THE WEEK! } Contributor: Brynley King { INGREDIENTS } 500g organic/grass fed beef mince 1 x brown onion, diced 1 x clove of garlic, chopped 1 tablespoon jalapeno/red chilli, chopped 1 x can black beans, drained and rinsed 4 heaped tablespoons tomato paste 1 tablespoon paprika 1 sweet potato, sliced into thin rounds Pinch of cayenne pepper (optional) 2 cobs of corn, husks removed TO SERVE: Shredded butter lettuce Chopped capsicum Sliced spring onion Sliced avocado Fresh coriander Yoghurt Fresh jalapeno chilli { METHOD } Preheat the oven to 180⁰C. Wrap the corn in foil and place in the oven. Lay the sweet potato slices on a baking tray, drizzle with some oil, and a pinch of cayenne pepper then bake for 20-30minutes or until slightly browned. Meanwhile, heat a fry pan on low-medium heat and cook onion for 2 minutes and then add the garlic and chilli and cook for a further 2 minutes. Add the beef mince, breaking it up and then add the tomato paste and paprika and cook until beef is browned. Stir in the black beans and cook for a further 3 minutes. Keep warm until the sweet potato is ready. Layer the bowl with lettuce, capsicum, spring onion, sweet potato chips, corn, the beef mixture, avocado, fresh coriander, yoghurt and fresh chilli.
