CHOCOLATE, LINSEED & COCONUT SLICE

{ GREAT ALTERNATIVE TO JAZZ UP THE KIDS LUNCH BOXES. }

{ INGREDIENTS }

SLICE BASE

200g of melted butter (olive or coconut oil if dairy free)

1 egg

1 teaspoon of vanilla extract

1/4 cup of coconut flour

3/4 cup of coconut sugar

1/4 cup of cocoa

1/4 cup of linseed

1/2 cup of shredded coconut

 

ICING

1/4 cup of coconut oil

2 tablespoons of cocoa

2 tablespoons of honey

1 teaspoon of vanilla extract

{ METHOD }

In a bowl mix together egg, vanilla, sugar and cool melted butter until combined. Add coconut flour, cocoa, linseed and shredded coconut. Mix through.

Pour mix evenly into a lined slice tray and bake at 180 degrees for 15 minutes or until firm. Remove and make icing while slice cools.

Place a bowl over a boiling pot of water and melt coconut with other icing ingredients. Pour over slice base while still warm and sprinkle with some shredded or desiccated coconut. Place in the fridge until icing sets and then cut into small squares.
