Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Beef Cheeks with Broccoli Mash
Beef Cheeks with Broccoli Mash { Winter is all about comfort foods and nothing screams Winter more than a slow cooked dish! Beef Cheeks are an economical cut of meat and the longer they are cooked the more tender they are. Winter food at it’s very best. } Contributor: Steph Lowe { INGREDIENTS } 4 grass-fed beef cheeks 2-3 sprigs fresh rosemary 2 garlic cloves, sliced 1 leek, roughly sliced 2 carrots, diced 2 celery sticks, diced 2 zucchinis, diced 400g tin chopped tomatoes 1 tablespoon tomato paste, no added salt 1 cup broth 1 – 2 bay leaves 1 teaspoon oregano Sea salt & pepper, to taste Broccoli Mash 1 medium head of broccoli, floreted 2 tablespoons grass-fed butter Sea salt, to taste { METHOD } On the base of a slow cooker lay the garlic cloves and fresh rosemary. Place the beef cheeks on top of this. Add leek, carrots, celery and zucchinis. Add in tin tomatoes and paste, broth, bay leaves and oregano. Season generously and toss to ensure all ingredients are well combined. Cover and place the slow cooker on low for 8 hours. Prior to serving, bring a small saucepan of water to the boil on the stove. Place broccoli florets in a colander or steamer basket, cover with a lid and lightly steam for 4-5 minutes or until softened. Remove from the colander or steamer basket and return to drained saucepan. Mash broccoli with butter and season with salt to taste. Serve with the beef cheeks. Pizza Shapes
PIZZA SHAPES { DO IT YOURSELF PIZZA SHAPES… PERFECT FOR ENTERTAINING OR JUST A QUICK SNACK. } Contributor: Casey-Lee Lyons { INGREDIENTS } 2 egg whites 1 tbsp olive oil 2 cups almond meal 1 tbsp dried oregano 1 tsp onion powder 1 tsp garlic powder 1/4 tsp ground paprika pinch salt and pepper { METHOD } Pre-heat fan-forced oven to 170°C. Whisk egg whites and oil together until combined. Add almond meal, oregano, onion powder, garlic powder, paprika, salt and pepper and mix to combine well. Place half of the dough onto the centre of a large sheet of baking paper. Place a second piece of baking paper on top. Using a rolling pin roll out dough to approximately 1/4cm thick. Remove top layer of paper. Using a knife or pizza cutter cut into shapes approximately 4cm x 4cm. Repeat with second half of dough. Transfer to a baking tray. Bake in oven for 10 – 12 minutes or until lightly golden. Allow to cool. Break apart pre-cut shapes. Store in an airtight container in a cool, dry place.
