Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

A DAILY PROTEIN BALL IS A HEALTHY WAY TO GET MORE OUT OF EVERY DAY. } Contributor: Teresa Cutter { INGREDIENTS } 330g (11 ½ oz) raw whole almonds or walnuts 60g (2 oz) Healthy Chef Protein ½ tsp ground cinnamon zest and juice of 1 orange 3 generous tbsp Healthy Chef Naked Chocolat or cacao powder 20 fresh dates, pitted 1 tsp natural vanilla extract coconut, goji berries, cacao or matcha, for rolling { METHOD } Place almonds into a food processor with protein powder, cinnamon, orange zest and Naked Chocolat then process until the mix looks crumbly. Add dates and vanilla extract then process again until the mix starts to come together. Squeeze in a little orange juice, so that mixture is soft and forms a soft ball. Form mix into 14 decent-sized balls. Roll in coconut or any other of my suggested coatings and store in the refrigerator until you feel like a snack or quick meal on the run. { NOTES } Store in the refrigerator and use as needed for approximately 2 weeks. LLN Colourful Quinoa Salad
LLN COLOURFUL QUINOA SALAD { A FRESH AND COLOURFUL SALAD USING WHOLE FOOD INGREDIENTS TO NOURISH. } Contributor: Casey-Lee Lyons { INGREDIENTS } 3 cups (420g) cooked quinoa, cooled* 1.5 tbsp (30ml) extra virgin olive oil Zest of 1 lemon 3 tbsp (60ml) fresh lemon juice 1/2 small red onion, finely diced (or 3 spring onions, finely chopped) 1/2 cup (10g) fresh mint, chopped 1/2 cup (10g) fresh parsley, chopped 3/4 cup frozen baby peas Arils (seeds) from 1 pomegranate** 1/3 cup (45g) pistachios, roughly chopped Pinch pink salt and cracked black pepper { METHOD } In a mixing bowl combine cooked and chilled quinoa with olive oil, lemon zest and juice. Stir through through red onion, mint and parsley. In a small heatproof bowl pour boiling water over peas to thaw (leave for 2-4 minutes). Drain well. Stir through peas and pomegranate seeds through quinoa. Season to taste. Add pistachios just before serving. Recipe Tips: *I cook my quinoa in a rice cooker using the ratio 1 cup quinoa: 1 1/4 cups water = 3 cups. **To remove seeds from a pomegranate – use the palm of your hand to roll the whole pomegranate on a flat surface with a little pressure to loosen the seeds (you will hear them loosen). Cut pomegranate in half and use the back of a spoon to hit the outer skin so the seeds pop out beneath.
