Warm Veg Salad

{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Fermented Macadamia Cheeze
FERMENTED MACADAMIA CHEEZE { SERVE THIS VEGAN “CHEEZE” WITH DRINKS OR NIBBLES BEFORE A DINNER PARTY AS AN IMPRESSIVE STARTER } Contributor: Anthea Amore { INGREDIENTS } 1 cup macadamia or brazil nuts (brazils will slightly darken the final product but make a lovely flavour and texture) 1 cup cashews 1 tsp lemon zest 20ml lemon juice 2 tbs savoury yeast flakes 1 tsp mixed dried herbs 1 tbs cider vinegar 1 tbs white miso (gluten free, unpasteurised) 20ml olive oil 1 tsp good salt FOR A YELLOW CHEEZE 1 tbs yellow gluten free vegetable stock powder (omit salt when using stock powder or add to taste) 1 tsp dijon mustard { METHOD } Process the nuts until they are a fine meal and begin to turn into nut butter. Add remaining ingredients and blend until mixture forms a ball in the food processor. Remove and shape into a round flat cheese-like shape. Serve it like this after chilling it in fridge for 1–2 hours or overnight for best result. Wild Fermented Version Wild fermentation will deepen the flavour of this cheeze. It takes approximately 3 days. Wrap it in muslin cloth (which makes a nice pattern) or simply put it in a bowl and cover it with a light clean tea towel. Allow it to sit in a warm place and ferment slightly for 2–3 days. The unpasteurised gluten free miso creates a wild fermentation process. In the case of warmer weather, check daily to ensure the cheeze doesn’t get too smelly! I’ve made it in hot weather and it was fine but I did check it every day to make sure. Place in the fridge to chill slightly before serving. It goes really nicely with cucumber slices, cherry tomatoes, olives, wild rocket, celery sticks or gluten free crackers. Food is life! We need food to survive, we enjoy food for community, we share food to celebrate and, let’s be real, who doesn’t love salivating over a delicious meal! However, dining out with dietary conditions can be quite stressful. For those of us who need to maintain a gluten free diet, studies have even been done to show how gluten anxiety affects your wellbeing. In order to avoid accidental consumption of gluten, it’s important to identify in what scenarios you may find it in the first place. GOING TO FAMILY AND FRIEND’S HOUSES: I often hear people say that their family says, “Well, you ate it all your life and you seemed fine to me. What’s a little going to do now?” Getting family on board with your dietary needs, especially when it comes to cross contamination, can be a huge learning curve for everyone.
