Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Sesame Snaps
Sesame Snaps { DANGEROUSLY DELICIOUS SESAME SNAPS , WILL KEEP YOUR COMING BACK FOR MORE! } Contributor: Jen Shaw { INGREDIENTS } 2 cups of sesame seeds 2 cups of desiccated coconut 1 cup of honey or maple syrup 2 tablespoons of coconut oil 1 teaspoon of vanilla 50g dark chocolate to drizzle on top (optional) { METHOD } In a pot melt honey, oil and vanilla together. Remove from heat, add sesame seeds and coconut and mix until everything is wet. In a shallow lined baking tray spoon mixture into the bottom until covered, pressing down until nice and compact. Bake at 180 degrees for 5- 10 minutes or until golden. Place in the freezer for at least 6 hours. PROTEIN-PACKED PANCAKES WITH CHIA BLUEBERRY TOPPING { PROTEIN PACKED PANCAKES, PRE-PREP AND FREEZE TO ENJOY ANY DAY OF THE WEEK! } Contributor: Activated Nutrients { INGREDIENTS } PANCAKES 1 cup almond meal 1 banana 1 egg 1 scoop Activated Nutrients Coconut Daily Protein 1/4 teaspoon cinnamon Coconut oil (for cooking) CHIA BLUEBERRY TOPPING: 1/3 cup frozen blueberries 1/2 teaspoon chia seeds { METHOD } To make your topping, mix frozen blueberries and chia seeds in a small microwave-safe bowl then microwave on high for 30 seconds.Stir the mixture again, then leave to sit out while you make your pancakes (the chia seeds will soften and form a yummy jelly-like texture with the liquid released from the blueberries).In a food processor, combine all pancake ingredients until smooth.Heat approximately 1/2 teaspoon coconut oil in a non-stick pan on medium-low heat.When melted and hot, pour 1/4 cup of pancake batter into the pan for each pancake and very carefully spread the batter into desired size using the back of a spoon.Cook the pancakes for 2 minutes on each side.Transfer cooked pancakes to a plate, top with chia blueberry mixture and enjoy!
