Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Cauliflower Fried Rice
Cauliflower Fried Rice { “I LOVE THIS RECIPE. THE USE OF CAULIFLOWER INSTEAD OF RICE BRINGS A LIGHTNESS, AS WELL AS A UNIQUE FLAVOUR AND TEXTURE. IT IS WONDERFUL AS A MAIN OR A SIDE DISH,” ANGIE DAY. } Contributor: Angie Cowen { INGREDIENTS } 1 tablespoon ghee or coconut oil 1 medium Spanish onion, finely diced 1 medium cauliflower 1 medium carrot, peeled and finely diced 1 medium zucchini, finely diced 1 tablespoon ginger, finely grated 1-2 cloves garlic, finely grated Pinch cayenne pepper Juice ½ lemon (2 tablespoons) 2 tablespoons tamari 2 tablespoons coconut cream ½ bunch fresh coriander, well chopped Olive oil to drizzle Himalayan or Celtic sea salt to taste Pepper to taste { METHOD } Cook onions in a large frying plan on medium heat till soft (approximately 5 minutes). Meanwhile, cut the cauliflower into manageable pieces and then, using the large side of the grater, grate the cauliflower to resemble rice-size granules. You can also use a food processor to mill it into shape. Add cauliflower, carrot, zucchini, garlic, ginger, cayenne pepper and tamari to the onions in the frying pan. Cook for 8-10 minutes, stirring occasionally until the carrot is just soft. Add lemon juice, coriander, coconut cream and season with salt and pepper. GLUTEN-FREE & FRUCTOSE-FREE QUINOLA RECIPE { THE PERFECT BREAKFAST OR PROTEIN PACKED SNACK, THE SUGARFREE BOX HAS DONE AN AMAZING JOB WITH THIS SUPERFOOD RECIPE! } Contributor: Steph Taylor { INGREDIENTS } 1 cup white quinoa (uncooked) 1/2 cup quinoa flakes (you can swap these for cashews or sunflower seeds) 1/2 cup raw almond flakes 1/2 cup raw pumpkin seeds 1/2 tsp cinnamon 2 tsp raw cacao powder 2 tbsp rice malt syrup 2 tbsp coconut oil { METHOD } Preheat the oven to 160C and line a baking tray with baking paper or a baking sheet. Combine the quinoa, rolled oats, almond flakes, pumpkin seeds, cinnamon and raw cacao powder in a mixing bowl. Mix well. Add the coconut oil and rice malt syrup to the mixture and mix until evenly coated. Spread out the granola mixture on the baking tray and bake for 15-20 mins. Don’t be worried if your granola isn’t crunchy when you remove it from the oven – it’ll become crunchy as it cools. Break into clusters and store in a jar or airtight container.
