Warm Veg Salad
{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }
{ INGREDIENTS }
SALAD
800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked)
DRESSING
3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan
½ tsp Pure Maple syrup
½ tsp Salt
{ METHOD }
Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.
Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency.
Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.
Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Spring Salad with a Mandarin & Sesame Dressing { THIS BEAUTIFUL CRUNCHY SALAD CAN BE TOSSED TOGETHER IN JUST 15 MINUTES AND IS SURE NOT TO WILT THROUGHOUT A DINNER PARTY! } Contributor: Anthea Amore { INGREDIENTS } ½ cup lightly blanched broad beans, cooled, skins removed ¼ cup freshly shelled peas 8-10 asparagus spears, blanched, halved lengthways 1 medium golden beetroot, thinly sliced 12-15 snow peas, blanched MANDARIN & SESAME DRESSING ¼ cup mandarin or orange juice 1 tablespoon toasted sesame oil 1 tablespoon cold-pressed olive oil ½ teaspoon quality salt 1 teaspoon finely minced fresh ginger 1 small garlic clove, finely minced { METHOD } Toss all the salad ingredients together in a large serving bowl and set aside while you make the dressing. Place all the dressing ingredients in a jar and shake vigorously until well combined. Pour over salad when ready to serve. Works well with any rice dish and is a wonderful side dish for a BBQ! Tip For a salad like this, I use a mandolin to cut vegetables into a perfectly even thinness, making for a prettier salad that’s slightly more delicate to eat. Helga’s Indulgent French Toast
HELGA’S INDULGENT FRENCH TOAST { “WARM UP YOUR WINTER MORNINGS WITH THIS FRENCH TOAST RECIPE. I LOVE LAYERING UP THE STACK AND DRIZZLING IT WITH MAPLE SYRUP FOR THE ULTIMATE INDULGENT BREKKIE IN BED.” SOPHIE HENLEY, HENLEY’S WHOLEFOODS } Contributor: Helga’s { INGREDIENTS } 4 slices Helga’s Gluten Free Wholemeal bread 3 eggs 1/3 cup almond milk Pinch of salt 50g walnuts 1/3 cup maple syrup, plus extra to serve 4 rindless rashers bacon 2 small bananas 1 heaped tablespoon coconut sugar { METHOD } Place eggs, almond milk and salt in a bowl and whisk until combined. Place bread into lamington pan or similar rectangular dish. Pour batter over bread. Leave to sit and soak in the eggy goodness for 30 minutes, gently turning after 15 minutes. Meanwhile, heat oven to 1800 Line baking tray with baking paper, scatter with walnuts and pour over maple syrup. Stir to coat nuts evenly. Roast 12 minutes or until nuts are toasted and caramelised, stirring occasionally. Set aside. Turn off oven. Heat a large non-stick frying pan over a medium heat. Cook bacon 2-3 minutes each side. Remove from pan and keep warm in oven. Remove bread from the batter, cook both sides until golden brown. Remove from pan. Cut bananas in half lengthways and coat inside lengths with coconut sugar. Place in pan, sugar side down and cook until golden and sticky. Now it’s time to assemble the stack! Layer from the bottom up: bread – bacon – banana – nuts –bread – bacon – banana – nuts – then drizzle with the extra syrup. HOW MUCH CAN A WILDE KOALA BEER? { We sat down with Koala Beer’s director/founder Chris Gordon for a chinwag and a GF coldie this month. Here’s cheers to that! } Photography www.rebelonarainbow.com Who is Koala Beer Pty Ltd and how did you get started? Koala Beer is our company name and WILDE is our product range. Koala Beer is family owned and run from Newcastle, New South Wales. The idea for our beer was originally sporned, believe it or not, from a close encounter with a family of black bears in Alaska. While taking a walk to visit a glacier, with an armed wilderness guide, I suddenly found myself separated from the group and just two metres from three cubs and a mumma black bear crossing the path. I should have been terrified but she was magnificent. She stopped, looked into my eyes for a lingering moment and then all four disappeared into the bushes. I shall never forget the magic of such a close encounter with the wild. It was one of those life-defining moments that makes you evaluate your life and where you’re headed. We then hurried to the nearby Alaskan Brewing Co. to enjoy a few good beers – I needed one! The idea seeded at that point. Bears lead to beers! We had an organic vineyard at the time and we decided to add an organic beer to our healthier lifestyle beverage range. We also had, however, several gluten intolerant and coeliac friends who kept asking, “Please make a gluten-free beer because we can’t find any that are nice.” So we decided to make a gluten-free beer that was also reasonable priced. We have done that. It’s very popular even with people who have no issue with gluten because they like a great tasting craft pale ale that is a healthier choice. It is called WILDE because of our wild bear experience and to denote that gluten-freedom can be fun. What makes WILDE gluten free? Beer is usually made from barley and/or wheat. Gluten is a component of many grains, including barley and wheat. The AIBA is renowned for celebrating and promoting brewing excellence in both Australia and around the world. It is the largest competition for the beer industry in the Asia Pacific region. Unlike sports competitions where gold, silver and bronze represent the top three places, beer medals are awarded to the entrants who achieve a certain level of judges’ points to recognise the beer’s quality. Therefore, there could be several golds or no golds, depending on how many beers are above the points threshold. It is generally recognised that if a beer has achieved any medal, it is a fine example of the class. It is a challenge to create a perfect flavour profile in the gluten-free class. In the AIBA 2014, no gold was awarded in the gluten-free section, so our silver was the top award. What are you most excited about for the rest of 2015? We are most excited about releasing our new beer, WILDE Raspberry Gluten Free Pale Ale and later in the year we plan to release our third beer, which is still under wraps. Our success thus far has brought us into exciting times. We are not only branching out with new products but also teaming up with interesting people and events that embody our company philosophy.
