Warm Veg Salad

{ THIS GLUTEN FREE WINTER SALAD IS GLUTEN FREE, DAIRY FREE AND VEGAN. ENJOY THIS NOURISHING AND DELICIOUS WINTER SALAD BY CLARISSA KOCOVSKI IN COLLABORATION WITH PIMP MY SALAD }

{ INGREDIENTS }

SALAD

800g Baby White Potatoes (washed)
1 Red Onion (roughly chopped)
1 Tbsp Oil
1 tsp Salt
½ tsp Black Pepper
2 Cups Asparagus (roughly chopped)
230g Cannellini Beans (drained)
Handful of Pimp My Salad Coconut Bacon 
Handful of Pimp My Salad Super Seed Sprinkles
½ Cup Black Rice (cooked) 

 

DRESSING

3 Tbsp Smooth Tahini
2 Tbsp Fresh Lemon Juice
1 Tbsp Nutritional Yeast
1 Tbsp Pimp My Salad Cashew Parmesan 
½ tsp Pure Maple syrup
½ tsp Salt

{ METHOD }

Preheat the oven to 200C. Slice potatoes into quarters. Place on an oven tray lined with parchment paper. Place the red onions onto the same tray. Drizzle oil. Season with salt and pepper. Mix. Roast for 15 minutes.

Meanwhile, to make the dressing, add all ingredients including Pimp My Salad Cashew Parmesan to a small bowl or recycled Pimp My Salad jar. Stir until you have a thick paste. Add a few teaspoons of water until you reach a runny consistency. 

Add the asparagus and beans to the same tray. Toss. Roast for another 15 minutes until the potatoes are cooked through.

Remove from oven. Allow to cool for 5-10 minutes. Time to plate up! Arrange rocket into the bottom of a serving platter. Add the warm veggies. Sprinkle over a generous handful of Pimp My Salad Coconut Bacon and Super Seeds. Add black rice. Drizzle over the dressing. Enjoy!

Cacao and Hazelnut Bliss Balls { CHOCOLATE AND HAZELNUT IS THE MOST DECADENT COMBINATION, AND THIS HEALTHY BLISS BALLS RECIPE MAKES THE PERFECT DELICIOUS TREAT TO GIFT YOUR LOVED ONES. } Contributor: Genevieve Le Hunt { INGREDIENTS } ¾ cup hazelnut meal ¾ cup desiccated coconut ¼ cup cacao powder 1 tbs chia seeds 1 tsp vanilla 1 cup medjool dates (pitted) 2 tbs coconut oil   GARNISH 2 tablespoons cacao powder for dusting { METHOD } Soak dates in warm water for 10 minutes to soften. Drain. Place all ingredients in a food processor and blitz until very well combined. If mixture appears dry, add 1 teaspoon of warm water. Roll tablespoons of mixture into balls with damp hands. Sweet Potato Brownie

Sweet Potato Brownie { A DELICIOUS HEALTHY TREAT TO SHARE WITH FRIENDS } Contributor: Steph Lowe { INGREDIENTS } 1 whole sweet potato 2 cup almonds 5 tbsp raw cacao powder 1 pinch sea salt 1/4 cup coconut oil, melted 1/4 cup rice malt syrup { METHOD } Peel and roughly chop sweet potato. Boil until soft and set aside to cool. (I often do this step the night before and leave it in the fridge overnight, but it is not essential.) In a blender, grind almonds, cacao and salt. Pour into a mixing bowl and add coconut oil and rice malt syrup. Combine thoroughly. Mash sweet potato and add to the mixing bowl. Fold through and stir well. Pour into a lightly greased or lined rectangular pan and press down firmly with the back of a spoon. Freeze or refrigerate, as it is delicious frozen and served at room temperature. If frozen, remove from the freezer for five minutes before slicing, allowing the coconut oil to melt a little.
