RAW CHERRY RIPE

{ THESE ARE GREAT IF YOU HAVE A SWEET CRAVING, AND JUST WANT SOMETHING SMALL AND A LITTLE LESS ‘NAUGHTY’ CHERRIES ALSO AID IN EXERCISE RECOVERY, SO TRY AND USE FRESH, ORGANIC CHERRIES, AVAILABLE SEASONALLY (SUMMER). }

{ INGREDIENTS }

CHERRY BALLS

2 cups cashews soaked for 2 hours

2 tbs Xylitol

1/2 cup dried organic cherries

 

GARNISH

1/2 of your favourite chocolate bar (I use loving earth)

4 cacao wafers

3 tbs Xylitol

1/2 tsp ground cloves

1 tbs vanilla

3 tbs coconut milk (cold)

Desiccated coconut

souvlaki sticks

{ METHOD }

Blend the cashews (discard the water) until they turn into a paste. Set aside in a bowl. Blend the dried cherries with the Xylitol. Mix with the cashew cream.

Place the paste in the fridge for about 2 hours until it hardens. Shape into little balls and place on souvlaki sticks ( you can use toothpicks if you like).

Roll the balls in coconut.

Melt your chocolate bar, cacao wafers, Xylitol, ground cloves, vanilla in a glass bowl over a pot that has boiling water (this is important so the chocolate does not burn). Mix until smooth, add more coconut milk if needed until it becomes thick.

Dip half the cherry ripe ball in the chocolate. Allow to set on baking paper and place in the fridge. Enjoy!
