{ INGREDIENTS }
BASE
1 cup raw almonds
1/2 cup cashews
1/2 cup shredded coconut
A big pinch pink salt
6 medjool dates, pitted
FILLING
1/2 cup tahini
1/2 cup maple syrup or sweetener of choice
1/2 cup melted coconut oil
pinch of pink salt
1 tablespoon peanut butter
1 tsp vanila extract
TOPPING
1/2 cup shredded coconut
1/4 cup macadamia nuts
1/4 cup dry roasted almonds
A big pinch of pink salt
{ METHOD }
Add all base ingredients into your high speed blender or food processor and mix until it is sticky and can be pressed together between your fingers
Press into a slice tin that has been lined with baking paper
Place in the freezer
Add all filling ingredients into your high speed blender or food processor and mix until it is smooth
Pour on top of the base and set aside
Add all topping ingredients into your high speed blender or food processor and blitz until the mixture is chopped but still a little chunky
Sprinkle on top of the caramel and press it in a little
Place in the freezer to set for a couple of hours then slice.
