Cherry Ripe Dreamcicles
{ NOT ONLY ARE THEY TOTALLY DELICIOUS THEY ARE SUPER CHARGED WITH HEALTHY FATS AND ANTIOXIDANTS FOR FULL SATISFACTION. }
{ INGREDIENTS }
1 Cup Coconut Milk
1/4 Cup Macadamias pre-soaked overnight, rinsed
1/4 Cup chopped cherries, fresh or frozen
1 Tbs Honey or rice malt syrup, or equivalent stevia to taste
1/2 tsp vanilla bean paste
2 Tbs dessicated coconut
2 Tbs Chocolate, shaved and chunky
{ METHOD }
Whiz together the macadamias, coconut milk, vanilla and sweetener in a blender until nice and creamy.
Blend in half the cherries, then add remaining ingredients.
Give it another whizz but don’t over-blend as you will want a few chunks.
Pour into popsicle molds then set in the freezer!
If you have chunks left in the bottom of the blender just spoon into the molds to finish them off. I always save some small yogurt style containers so I can freeze up any last bits that don’t fit in the molds.
For a variation try swapping half greek yogurt and changing your fruit combo for the popsicles. Any berries, peaches, or other soft sweet fruit will work beautifully
