GLUTEN FREE ABC Muffins
{ Apple, Banana, Carrot Muffins… Made gluten free! }
{ INGREDIENTS }
2 bananas, mashed
2 apples, grated
1 carrot, grated
1/2 cup honey or maple
200 grams butter, melted
3/4 cup milk, or dairy free alternative
4 eggs
2 cups self-raising gluten free flour
1 cup gluten free oats alternative – I used Bask and Co
1 tsp gluten free baking powder
2 tsp cinnamon + any other spices you like
{ METHOD }
Preheat oven to 175*, fan forced. Grease 24 muffin tins.
Grate apples and carrots and mash bananas.
Combine honey, melted butter, cup options and beat in four eggs.
Gentle combine flour, oat option, baking powder and spices.
Pour into muffin tins.
Bake for 30 minutes or until golden brown.
