GLUTEN FREE AND FODMAP-FRIENDLY HAM AND VEGGIE QUICHE

{ THIS RECIPE IS SO EASY AND TASTY – YOU CAN PRETTY MUCH GRATE YOUR FAVOURITE VEGGIES AND GO! PERFECT FOR MEAL-PREPS AND LUNCHES. THE KIDS WILL LOVE IT TOO! }

{ INGREDIENTS }

Your favourite GF pastry*

10 eggs

2 zucchinis, grated

1 red capsicum, grated

1/3 cup shredded parmesan cheese**

200g thinly sliced ham (I used 2 packets of Primo Double Smoked Ham), diced

Salt & pepper

{ METHOD }

Preheat the oven to 180*C or 350*F
Line baking dish with baking paper.
Roll out pastry, shape and line baking dish
Parbake for 20 minutes (or follow instructions on packet)
Whisk 10 eggs in a large bowl
Fold in all other ingredients until well incorporated
Pour into parbaked pastry lined baking dish
Bake for about 35 minutes or until mixture no longer jiggles in the middle

*Grain free option: Omit pastry
**Dairy free option: Omit parmesan cheese
