Banana Choc Chip Pancakes
{ NOTHING SAYS ‘I LOVE YOU’ LIKE A HEALTHY AND DELICIOUS BREAKFAST COOKED WITH LOVE – SERVED IN BED OPTIONAL! }
{ INGREDIENTS }
½ cup sorghum flour
¼ cup buckwheat flour
2-3 tbs dark chocolate chips (use good quality dark chocolate with high levels of cacao mass and cacao butter)
2 tbs coconut sugar
½ tbs banana flour
¼ tsp guar gum
1 cup milk of choice (we used almond milk)
¼ cup mashed ripe banana
{ METHOD }
Add all ingredients to a medium mixing bowl, mix until well combined and small air bubbles appear.
Heat a greased frying pan on medium-high heat.
Pour ¼ cup of batter at a time, into frying pan.
Cook on one side for approximately 3 minutes, or until small air bubbles appear.
Flip and repeat on other side.
Serve with your choice of fruit, chocolate or coconut ice-cream.
*Note: Banana flour (dried ground bananas) and guar gum (powder made from guar beans) are great pantry staples to keep on hand to ensure your gluten free baked goods have an appealing texture. Both of these items should be available at your local health food store.
