LLN GLUTEN FREE BANANA MUFFINS

{ INGREDIENTS }

3 large free range eggs

3/4 cup plant based/dairy free milk or coconut water

2 tablespoons extra virgin coconut oil, melted

1 1/4 cup mashed bananas, (approx 2 large over-ripe bananas)

1/2 cup coconut flour, sifted

1/2 teaspoon gluten free baking powder

{ METHOD }

Pre-heat fan-forced oven to 180°C.

In a medium bowl, whisk together eggs, milk, melted coconut oil and mashed banana until well combined.

Add in coconut flour and baking powder and whisk to remove any lumps. (Mix batter just before placing into muffin tray to ensure the mixture is evenly combined).

Spoon into a greased muffin tray. Bake in oven for 25 – 30 minutes or until cooked through.

 

Recipe Tips:

For a nut free option use coconut milk or coconut water instead of nut milks.

Total time: 25 MINUTES
