Almond & Peach Loaf

{ A DELICIOUS PEACHY BREAKFAST OR AFTERNOON TEA, PERFECT WITH A COUP OF TEA. }

{ INGREDIENTS }

1/4 cup Coconut oil
2 Tbs Honey
1/4 Tbs Almond milk
4 eggs
1 1/2 Tsp Vanilla Bean paste
2 Tsp Baking powder
2 Tbs Coconut flour
1 1/2 cups Almond meal
1 Peach, halved

{ METHOD }

In a blender place the eggs, vanilla, and honey and blend on low until combined.

In a separate bowl place the almond meal, coconut flour and baking powder and gentle mix together with a wooden spoon.

Tip the blender mixture slowly into the dry ingredients bowl, folding it in gently every time you ad more mixture. Once combined add the milk and oil and repeat the folding until all liquid has been absorbed.

Then place in a pre lined loaf tin, and place the peach halves on top and light press into mixture until the top is level.

Place tin into a preheated over of 170 degrees Celsius and bake for 45mins or until golden brown and bounces back when touched.

Enjoy hot or even toasted for breakfast.

Cook time: 45 minutes
Total time: 1 minutes
+ 6-8 SLICES +
