Sunflower Seed & Herb Pate

{ VEGAN PATÉ, PACKED WITH NUTRIENTS FROM THE GOODNESS OF SUNFLOWER SEEDS }

{ INGREDIENTS }

1 cup brazil nuts

2 cups sunflower seeds

1 tsp savoury yeast flakes

1/2 cup lemon juice

1/2 cup olive oil

1 tsp good salt

2 tsp mixed dried herbs

3 tsp tamari (gluten free soy sauce)

2 tsp apple cider vinegar (raw, if possible)

 

GARNISH

1 sprig each of rosemary, thyme and oregano

olive oil

black sesame seeds

freshly cracked pepper

{ METHOD }

Blend brazil nuts into a fine meal in your food processor and put aside in a bowl.

Blend the sunflower seeds to a fine meal. Add the rest of the ingredients including the ground brazil nuts and blend until a smooth but thick paste forms. Be sure to scrape down the side as often as you need to and be careful not to stress your food processor because it’s such a thick, earthy paste.

Once all the ingredients are blended together, spoon the paté onto a platter and form into a flat square shape or whatever takes your fancy. You can use your hands at first to get the basic shape right, then use the flat edge of a knife or spatula to smooth it off. Garnish with herb sprigs, a drizzle of oil and black sesame seeds or cracked pepper.

Serve with your favourite gluten free crackers. Something simple works best as the paté has such a full, rich flavor.
