Slow Cooker Healing Chicken and Rice Soup

{ THIS GLUTEN FREE COMFORT MEAL WAS CREATED TO HEAL AND REVIVE, ESPECIALLY WHEN YOU HAVE COELIAC DISEASE! }

{ INGREDIENTS }

1.5kg whole chicken
1 x brown onion, diced
3 x celery stalks, sliced
3 x medium carrots, diced 
1 knob ginger, peeled & sliced
1 chili, sliced
3 x garlic cloves, sliced OR 1 Tbsp garlic infused EVOO
1 Tbsp turmeric
S&P to taste 
1 lemon, juiced
Fresh thyme
6 cups chicken broth
1 cup basmati rice

{ METHOD }

Add all ingredients, except the rice, to the slow cooker. Cook on low for 3.5 hours. Remove chicken (once fully cooked), let cool and shred while rice cooks. Add rice to slow cooker, stir and cook on low for 30 minutes. 

 

Place shredded chicken in your bowl, ladle soup and season to taste. Enjoy!
