{ INGREDIENTS }

2 cups brown rice

1 tbls miso paste

1 cup broccoli

1/2 small sweet potato

2 kimchee fermented Japanese plums

1 soft boiled eggs

sesame seeds

Japanese / Superfood Wakeme or Nori flakes

3 baby beets

Olive oil or coconut oil

Pink Salts of the earth

{ METHOD }

Prepare the rice to boil in a pan with 3 cups of water to 2 cups of rice. Brown rice takes a little longer to cook than white rice, so you may need to monitor and add more water.

Set aside and once a little cooled, add the miso paste and stir through with salt to taste.

Roast the veggies with the oil and salt. Set aside and prepare the soft boiled egg.

Place the rice in a bowl and add roasted vegetables and boiled egg. Garnish with black or white sesame seeds and the Wakame or Nori flakes. Eat right away!

Bengal Tiger Lentil Curry

{ A CLASSIC NORTH INDIAN LENTIL DISH, THIS CAN BE DRAMATIC LOOKING, AS THE YELLOW LENTILS STAND OUT FROM THE SMALLER BLACK PULSES. MOST IMPORTANTLY, IT IS LUSCIOUS AND DELICIOUS. ONCE THE LENTILS SOFTEN, THE MORE YOU STIR THEM THE CREAMIER THEY BECOME. LENTILS AND BUTTER GO REALLY WELL TOGETHER, SO I DO RECOMMEND YOU ADD A LITTLE BUTTER AT THE END BEFORE SERVING. THIS IS GREAT WITH RICE OR INDIAN BREADS. }
